It is almost impossible to go from running one restaurant to running two restaurants.
The reason is that the person who manages the first restaurant will have to start and manage the second restaurant. Few if any people have the skill to manage two separate operations. Certainly not small business startup types. In order to do this one must be able to have a full-time manager in the first restaurant. That requires either significant capital or a very large operation to begin with ( more than 150 seats).
It is easier to start two new restaurants (total of three) because the manager of the first can then hire three separate managers and justify his own overhead.
However there is an interesting way around this and that is to use a food truck as the temporary second restaurant. This not only allows the restauranteur to find better locations for the second restaurant it also allows the restauranteur to train a chef and operator in a simple operation without a complex menu.
From the vantage point of the truck and its operator it is a straightforward matter to open a new restaurant and put the truck operator in as the manager
